Last week, we explored the world of busy buzzy bees and now, the sugary superfood they create takes center stage. Try not to get too hungry as we dive into the saccharin world of honey.

* Let’s start with how it’s made: Bees collect nectar from flowers and store it in what’s honestly called their “honey stomach” kind of like your dessert stomach when you say “Yeah, I could go for some ice cream after the buffet”. It never mixes with the food a bee actually eats, so it’s not quite “bee vomit” but once enzymes break down the nectar into simpler sugars, they do regurgitate it to other bees, so, y’know, still gross. When the water content is low enough, that’s when they deposit it into those hexagonal honeycomb cells, shaped because they use the least amount of material to hold the most weight.
